About GApps, I've seen BiTGApps, which is ready for Android 12. And by the way, they also provide a microg installer, but you need a ROM that supports signature spoofing. Source: over 2 years ago

I, an engineer, am not doing this myself, too. There is a middle ground though: just use a privacy-oriented Android build, like DivestOS. [1] There are a couple caveats: 1.
